Baking a Cake with Jack Pearson

It was a cold winter’s afternoon. Tom being Tom had got himself in a spot of bother with mum. “Turn that off now, you’ve had enough electric for one day” she said. The next thing we knew Mr. Bean was off and on came the radio. Then we knew, baking time was upon us. We washed our hands and stepped forth towards the mighty cupboard. Men had been lost, women never seen again who had dared to delve into this cupboard.

I shouted from the chair, “Are we using the golden recipe?” I knew we were going to because it was too good to pass up.
“Shout out the ingredients Jack” came Tom’s voice.” Ready or not, here they come” I said.

Ingredients for Mum’s Sponge Cake (or fairy cakes).

Eggs (3)
Sugar (same weight as the three eggs)
Butter (same weight as the three eggs)
Self raising flour (again same weight)
Baking powder (1 good tsp)
Chocolate powder (3 1/2 tbsp)
Icing sugar (to decorate)
More butter (for decoration)

You will also need

Grease proof paper
2 x 20cm sponge tins
Fairy cake tins and cases
Method

Step 1

Turn the oven on at 180. Then put sugar and butter in the mixer and mix
until white and fluffy.

Step 2

Add 1/3 of your flour and eggs (which should be beaten as late as possible to keep their energy). Whisk at intervals add in flour and eggs every time. Remember to add in the baking powder to your flour.

Step 3

Line the tin (this prevents the cake sticking). I suggest putting grease proof paper in.
Before dividing – add in any flavouring you may like i.e. chocolate. Finally whisk.
Split the mixture 50/50 so it looks the same. If you are making fairy cakes add small amounts to the cases. You can fill them up if needed.
Bake for about 20 minutes untill well risen and golden brown and firm to the touch.
Allow to cool before decorating.

Step 4

Decorate. Butter icing is very tasty and easy to make. Put butter in a bowl and mix until pale and soft. Then add icing sugar to the butter and mix until its creamy. Then it’s perfect. Apply to the cake or cakes. Cover with a cloth so they don’t dry out.

Then enjoy.
